Beer and Bacon
What is better than beer or bacon? Beer AND Bacon. Join chef James Cain as he walks you through the wonderful world of bacon (including his own special smoked creation) paired with delicious craft beers to enhance your culinary experience. You will learn how bacon is made, how to properly cook and serve your bacon and taste and take home several amazing bacon recipes.

After completing an associates degree in culinary arts in Chicago, James Cain continued his education through a Mediterranean cooking course at the Culinary Institute of America Greystone in Napa Valley. Cinco De Mayo Celebration: Tortilla 101
Prepare for Cinco De Mayo with a tortilla extravaganza! Flat pancakes of corn or flour, tortillas can be served warm under an endless variety of fillings and layered with countless toppings. They can be wrapped around fillings to make yummy packets, used as tasty food-scoops, offered up toasted and topped with salads; or simply served hot, pliable and plain. Join Christy (and perhaps a special guest or two) as she shares favorite recipes for salsas, toppings, fillings and desserts perfect for your fiesta.

Coffee Cupping 101
Coffee cupping is the practice of observing the various tastes and aromas of brewed coffee. If you are a coffee lover who wants to become a coffee connoisseur, you must attend this workshop. You learn to determine where in the world a coffee comes from just by tasting. You will taste a variety of coffees to evaluate fragrance, acidity, body, flavor and finish. By the end of this workshop you will appreciate the finer points of these brews as you breathe in the aroma and savor each cup.

Food and Wine Pairing
For most people, food and wine pairing appears to be a mystical experience that only an accomplished wine connoisseur with a fantastic food knowledge can navigate with certainty. Well that’s just not true. In fact, anyone can learn how to successfully pair food and wine. This class explores how the food and wine experience can be enhanced with some practical knowledge. We’ll cover the components of wine and food, their region and origin and learn some tricks of the trade. We’ll also taste and pair wines and dishes developing confidence about the process.

Introduction to Coffee Roasting
This course will provide a history of coffee roasting and explore the various coffee growing regions and different coffee beans. Students will learn about the different types of roasters, grinders, and coffee makers. Most importantly, students will have the opportunity to select, roast, and understand how to blend coffee to achieve the best cup of coffee possible.

Vine to Vino
Traditional wine-making is an art. It’s an experience that begins with planting and caring for the vines, picking the correct soil and hoping for the right amount of sun... too little and the grapes could rot on the vine or too much and they shrivel to raisins. The adventure doesn’t stop there! You must pick the grapes at just the right moment to harvest each type of grape, then using a combination of science and “wine wisdom” to craft the perfect bottle of wine. Where does this happen? Is it only in far off villages with quaint Tuscan names? No! It takes place in small local wineries all over America... many right in our own backyard! Join us at one of them, Thousand Oaks Winery in Marble Hill, Mo., for an afternoon of learning how this amazing transition from the vine to vino occurs. We’ll learn all about:
- Establishing a vineyard and winery operation
- Soil testing and preparation
- Grape selection and harvesting
- Crushing, destemming, and pressing grapes
- Fermentation
- Bottling and labeling

Wine for Women
Marketing research shows that women account for nearly 64% of all wine consumers and, overall, purchase more wine in retail sales than men. “Wine for Women” is targeted at females looking to increase their knowledge of wine. The class combines a tasting of fine wines produced by and marketed to women, as well as food and wine pairing, proper service, storage, and reading and ordering from a wine list. Ladies, it’s time to take control!
