An Afternoon at the Winery: Cooking with Flames

Join hosts Bob and Teresa Eachus at Thousand Oaks Winery to learn about (and sample from) one of the region’s only wood-fired masonry ovens. The evening will demonstrate how you can grill, bake, etc. - all in the same oven with remarkable results. Taste these results in a seven-course meal including: artisan bread, soup, salad, Italian ice, a meat
course, dessert, gourmet coffee, and a glass of your favorite house wine. Whether you are interested in constructing your own outdoor oven or just enjoying good food and great company - this is the event for you.

Location: Class will meet at Thousand Oaks Winery in Marble Hill, Mo.
Dates/Time:  Sunday, Nov. 1, 3:30-6 p.m.
Fee:  $39/person or $70/couple

Beyond the Basics: Holiday Breads and More!

Due to popular demand, the Office of Extended & Continuing Education is considering offering a second session if there is enough interest. If you would be interested in attending a session on Saturday, Nov. 21, please call (573) 986-6879 to be added to the list.

So you’ve learned the basics of bread making, are you ready to refine your skills and take your bread-making to the next level? In this workshop we will build on the fundamentals of bread baking by making ciabbata, brioche, sourdough, french croissants, King’s Hawaiian bread, Blue Willow Pantry’s signature cinnamon rolls and more! We’ll make artisan breads that are rich in culture, tradition and flavor like the Kelso pannetone and learn how to enhance the look of breads by using brotforms and other bread molds. The possibilities are endless! Join us as we make an assortment of breads sure to impress your guests this holiday season! 

While this course will build on the skills learned from Cheryl’s Bread-Making Basics class, beginners are still welcome

Cheryl Reinagel, co-owner of Blue Willow Pantry Catering Company, has been catering in Southeast Missouri since 1996! Although their specialties are sourdough bread, cinnamon rolls and coffee cake, Blue Willow Pantry Catering Company makes everything from breads to cheese to homemade pasta. During the last 10 years, they have hosted cooking schools and cooking theaters in addition to catering and working full-time. Mouth-watering Martinis & Impeccable Infusions

A symbol of sophistication, the martini has become a huge part of both popular culture and at-home entertaining. Join mixologist Airek Beauchamp and learn how to make the perfect martini/martini cocktail using alcohol provided by Major Brands, Inc.

In addition to debating “shaken or stirred” you will also:

Learn the differences between martinis and “martini cocktails”
• Taste the difference between gin and vodka martinis
• Answer the age-old question “What is vermouth?”
• Get the secret to serving your martinis in style
• Explore simple methods of making your own sophisticated infusions and creating your own “signature” cocktail

Seven Great Holiday Wines on a Budget

Think you have to break the bank to have a nice wine with your dinner? Think again. It’s easy to find some real gems, if you know where to look and how to shop for them. Join us as we taste and compare seven great wines for a total cost of under $80! In addition, our wine expert will discuss the basics of food/wine pairings and how to properly serve different wines.  In this class you will sample: white wines (one chardonnay and one riesling), red wines (one cabernet, one red zinfandel, and one pinot noir), and dessert wines (one moscato d’asti and one port).

Fee covers all tastings. Please bring a photo ID that indicates your age to class.

Alexis Thomas has worked for A. Bommarito Wines, a Missouri wholesaler/distributor of fine wines for three years.  Prior to working at A. Bommarito Wines, Alexis attended Southeast Missouri State University where she earned a degree in marketing.

Sweets for the Sweet: Candy-Making for the Holidays!

Due to popular demand, a second session has been added on Saturday, Oct. 3.  Seating is limited; register early to ensure your seat!

How can you show your loved ones that you love them? With chocolate, of course! What better way to show your affection than with confection? Join caterer Cheryl Reinagel on Sweetest Day (October 17) as she whips up a delightful arrangement of chocolate delicacies sure to satisfy your sweet tooth. Cheryl will make sinfully delicious chocolate so heavenly dreamy that we’re betting you’ll find ways to incorporate candy-making for all your holiday occasions!

We’ll make an assortment of chocolate including: California white fudge, $500 fudge, truffles, bon-bons, chocolate covered cherries, chocolate covered peanuts, praline pecans, caramels, and crème filled candies. In addition, Cheryl will teach you how to use candy molds and you’ll learn (and taste) the difference between the cheaper and high quality chocolates.

We’ll have fun, fun, fun sampling candies and sharing candy-making stories at lunch.... And did we mention there’s chocolate???
