Gourmet Cooking and Foods
Nothing says lovin’ like something from the oven...but homemade says it best! Join us as we discover the world of sweet breads! This class focuses on making a variety of homemade treasured sweet breads. You’ll learn to make yeast dough by hand and shaping techniques that are sure to become a regular part of your baking repertoire. We will make cherry and cheese-filled danishes, signature cinnamon rolls, old-fashioned German coffee cake, and cream puffs. Lunch is included! Saturday, March 7 Cheryl Reinagel, co-owner of Blue Willow Pantry Catering Company, has been catering in Southeast Missouri since 1996! Although their specialties are sourdough bread, cinnamon rolls and coffee cake, Blue Willow Pantry Catering Company makes everything from breads to cheese to homemade pasta. During the last 10 years, they have hosted cooking schools and cooking theaters in addition to catering and working full-time. Many Italian mothers and grandmothers make their pasta from scratch because they know you can’t beat the quality of homemade pasta. Mammas know if you haven’t had homemade pasta, then you’re missing out! In this course caterer and mamma, Cheryl Reinagel, will demonstrate how to make ravioli, fettuccine, cannelloni, and dumplings. You will also learn tips and techniques for making fresh and dried pasta, as well as flavored pastas. The class includes lunch where the star attraction is you and the pasta you’ve just made. One of our most popular presenters, James Allen’s knowledge and enjoyment of food, wines and the community of cooking comes through in his courses.
Growing grapes and making wine stirs the souls of some, provides casual exercise for others, and for a few, involves an all out effort to succeed commercially. In this workshop, we will look into the activities and experiences of one very small family-owned and operated vineyard and winery. The course will be broken into two parts: the Vineyard and the Winery. In the Vineyard, participants will learn about the care and operation of an established vineyard as well as tips like pruning, pest-control and harvesting grapes. The Winery will focus more on the seasonal and daily issues of a small commercial winery. Discussions will include: fermentation, barrel types, bottling and more. Departs from Southeast Campus 8:30 a.m.-4 p.m. Ron & Kay Durso, Clint VanMatre, and Dougles Peck, Instructors Fee: $55/person or $100/couple (must be 21 or older) Lunch will be provided for an additional fee. Picnic baskets welcome. Complimentary wine tasting included! Durso Hills Winery, located in Marquand, MO is owned and operated by Ron & Kay Durso. Ron, with the help of Clint Van Matre, grows the grapes and makes the wine. He is an IBM retiree and holds a Master of Science degree in Chemistry and Math from the University of Mississippi. Durso Hills wines have received recognition, winning gold, silver, and bronze medals in Missouri state wide competion. |
